Industrial production of Margarines has more than 100 years history and to date shows steady growth. The development of scientific knowledge about the influence of different fats and oils on human health varied requirements for raw materials for margarin’s production. To meet modern requirements on the content of TRANS-isomers in food products it examines the role of palm oil in the production of Margarines. The current state of Margarine market in Russia is analyzed.
The peculiarities of Russian legislation in the field of Margarine production is discussed. Comparative analysis shows the lack of harmonization of Russian legislation with international norms and rules in the field of transportation and storage of edible oils and fats particular used in the production of Margarines. This leads to the possibility of using non-food quality palm oil in food production and creating the negative image of palm oil in Russia. Unresolved issues of Russian legislation related to the labeling of food products using vegetable oils, including palm oil, and hydrogenated fats/oils are considered. Solutions to problems are discussed.
